Chorizo Breakfast


  • pound link sausage
  • 6 eggs
  • 10 ounces canned corn
  • 1 cup rice cooked
  • 12 flour tortillas
  • 1 cup Ortega salsa – thick & chunky (medium)


  • Slice link sausage and cook in a skillet until brown, stirring frequently. Add eggs, stirring constantly.
  • Stir in canned corn (drained) and cooked rice. Spoon onto flour tortillas and roll or fold to enclose the filling. Serve with salsa.

Yields 6 servings.
